I hadn't really given it much thought, but one option would be that they are herbivorous, eating algae, plant debris, decaying vegetation, etc., like Water Boatmen.

I agree, Sis - Wattled Plover would have been a much more obvious choice - perhaps we should research just who named it and give them an Over Thinking Award.
